Paula Paiva is a 5th generation coffee producer at her family farm called Fazenda Recanto in Sul de Minas, Machado, Minas Gerais State. The history of the farm is incredible and the earliest records of activity on this farm began in 1896.
In the current specialty coffee market, producers are always reaching for innovations and different types of processing methods. An example of this is the addition of fruits in the fermentation, that is what Paula Paiva, owner of Fazenda Recando did. This coffee went through an anaerobic fermentation process for 48 hours where lime was added from the beginning.
Coffee fermentation by itself is already a very complex process and it does not always work positively and when adding another variable it can become more complex again. For us, the fermentation process of this coffee with lime has had a very positive result with a beautiful coffee as the outcome.
This coffee is complex, sweet & fruity with a malic acidity reminiscent of green apples, a sour lingering acidity to excite your tastebuds.
